Watercolor is such a versatile medium. It seems hard to control, but then when you play a lot with it, you'll get to know the material and its behavior better. That way you'll get more confident using it in your sketchbook pages. There's always some unpredictability when you use watercolors, but that's part of the fun, and it challenges you to be creative with whatever occurs on the paper.
Try this technique to create great textural effects - for example to prepare background washes to draw on: Spattering. Wet on wet and wet on dry create completely different effects!
