Drive slowly to Pronghorn ranch and don't go off road to avoid dropping supplies, remember you are not on a time limit for this bit so there is no need to rush. Then when your wagon is stolen, get on the nearest horse, ride along side it, and when the tool tip prompts you press the button to jump to it - you will automatically throw the thieves off, and drive back promptly to the ranch to complete the mission - the minute time limit is generous, I have about 20 seconds to spare for this one.
