To get the two guys in the cornfields in under a minute, make sure you have a powerful weapons selected like the Bolt Action Rifle, preferably with express ammo, before you arrive. After the cut scene where the bounty hunters flee, run forward and look out to one running right through the corn. You will lose sight of him quickly, so use Dead Eye to spam him, which will work through the corn. But don't rely that a single headshot will do the job, empty your magazine, because if he gets away, you've failed. Then head forward through the two big clumps of crops, and take a left, looking to your left for the second guy - again use Dead Eye to empty an entire magazine into him. You can't really fail to find all the clues and follow the trail if you keep Eagle Eye Active - when it runs out, just activate again. Other than that, make sure you collect the Rare Rolling Block Rifle from one of the bad guys in the barn as this is the only opportunity you have in the game to get it.
