It also seems likely from my play through that blocking is insufficient as you still take a small amount of damage. There is one trick that can really help however, as of patch 1.13, if he hits you, die, and restart. It seems you can still complete with gold if your time is good enough. In terms of the fight, not getting hit at all is still tricky. I aim to grab him (with Y on the Xbox). If "struggle" comes up, hit B rapidly, and then try to grab him again. Once grabbed, press down on the left analogue stick to slam him to the floor. Then beat him a couple of times, dismiss him, and aim to repeat. Note if you have him in the hold and beat him too many times, there is a danger he will hit you to break out of it, which will cause you to fail, so don't be greedy and try for too many hits. The time isn't too difficult, just the first opponent at 6:45 is easily dispatched, for the second opponent at 7:15 use the hold and slam to the ground (train roof) approach, but you can beat him enough without dismissing him to take him out there and then. Note you can take damage against this opponent without failing, it's Anderson who you musn't let score a hit on you. Other than that, get Anderson on your horse quick and ride promptly. Make sure you accept the fishing trip at 14:02 and catch at least one finishing - but this is fairly slow, so don't proceed unless there is any doubt you took no damage in the fight.
