There is no time limit, and at the end you get a small section where the enemies spawn indefinitely. This is at 13:34, coincidentally, where I get the last headshot needed. Dutch will initially ask you to hold the solider off, but then say "there's too many Arthur, fall back". Ignore that call for as long as you feel necessary to get the remaining headshots you need, as the bad guys keep coming until you retreat to catch up with Dutch. It's obviously much easier to get this on a main play through than a replay if you stock up on Dead Eye tonics. Regardless, you should use normal aim to get your sights close to the target, then only use Dead Eye to tag the head, thereby preserving your bar as much as possible. Note that tagging almost guarantees a headshot, even if you are aiming at the neck of shoulder when you press the button to tag. Other than that, be ready for the sequence where the cannon is deployed against you, and push up quick - make sure you have sufficient Dead Eye to kill the soldier manning it from range. Fans of the original game will enjoy a familiar monologue from Dutch, as will players who have watched Butch Cassidy and the Sundance kid for the homage to a classic scene.
