With most of the sequences, semi scripted, it is the gun fight in the forest where you can make up the time from 11:26. Use your horse to ride towards enemies and dispatch them quickly, I favour the pump action shotgun for close range, and the bolt action rifle for long range. When the wagon appears at 12:29 kill the driver an then throw a dynamite stick to take out a big group of them in one go. Then get on your horse and ride out as soon as prompted. If you know where the enemies will come from and get them quick you should beat the time. Getting a pursuer's horse is easy provided you use Dead Eye.
