The main challenge here is killing quick for the headshots as there aren't that many bad guys and if you are slow the danger is Tom and Abe will off a few. So using Dead Eye is key to get them first. It also has the benefit that a tag, even around the neck or the shoulder, pretty much guarantees a headshot, even if the target is moving, the only way you can miss is if an obstacle gets in the way. The downside is you won't have many Dead Eye items yet, although you should start with one chewing tobacco in your satchel from the beginning of the Epilogue. If you only activate Dead Eye for the brief moment you tag the head, then deactivate after firing, then you should be fine. Also, obviously only use pistols with dual wield for this one. Also loot the corpses at the end as there is no time limit and you will be short on items.
