You need to hold up one store for 100%. As you're in this area, this remote store to the north is good, as it's easy to drive towards the train tracks and up the side of the mountain to evade the cops. Don't shoot anyone, especially the cops, as if your wanted level goes to three stars they will get the helicopters out, making escape a whole lot harder.
