Cooking shouldn’t feel like a job at the end of the day, correct? And dinner definitely shouldn’t leave you flat on the couch. My Italian Stuffed Peppers with Chicken are what I make when I want something comforting, but I still want to feel good after eating it. Instead of heavy beef, I use lean chicken mince. It’s lighter, cleaner, and it lets the Passata sauce actually shine. That thick tomato sauce sinks into the rice and keeps everything juicy without turning it into a brick. And when the mozzarella melts and bubbles on top, it goes golden around the edges. That’s the part you fight over, or at least I do! These baked stuffed capsicums look impressive enough for a Sunday lunch, but they’re simple enough for a weeknight dinner. High protein, full of flavour, and no food coma after.
